On Tuesday, Dec. 31, A will offer two dining options; the regular menu will be available from 5 to 7 p.m., and a second seating beginning at 9 p.m. will have a five course prix fixe menu for $125, which includes entertainment by a DJ, party favors and a champagne toast at midnight.

The prix fixe menu will begin with Lobster and Caviar (Maine lobster, fennel, blood orange, white sturgeon caviar and avocado); a second course of Black Truffle Gnocchi (ricotta and truffle gnocchi, rapini, hedgehogs, parmesan fondue and a 62° egg); followed by a salad course of Baked Ricotta and Fuyu Persimmon (Pink Lady apple, pomegranate, butter lettuce, nasturtium leaves and a medjool date vinaigrette.)

Guests have a choice of three entrees, including Milk Fed Veal Chop (leek bread pudding, chantarelles, sweet vermouth cream, celeriac and red pearl onions); Roasted Loup de Mer (European sea bass with cauliflower steak, capers, Meyer lemon, sunchoke puree, brussels, and Parisian potatoes); or Private Reserve Wagyu Strip Loin (with potato and kohlrabi galette, shimeji mushrooms, fresh wasabi root, bone marrow espuma and “A” steak sauce. Dessert is a Deconstructed Rocky Road (chocolate malt ice cream, chewy caramel, marshmallow and peanut butter powder.)

To accompany dinner, A offers the expertise of four sommeliers to help select from a recently expanded wine list. The restaurant also features a new menu of signature cocktails and an array of craft beer.

Ways & Means in Old Towne Orange will bid farewell to 2013 and celebrate its first New Year’s Eve on Tuesday, December 31 with a festive six-course tasting menu. The restaurant opens at 4pm and serves until 11pm. The last seating will include a champagne toast and countdown to midnight with DJ music and dancing until 1:30am. We will be serving from our standard dinner menu along with the following prix fixe VIP menu. Seating is limited and has already sold out at certain times. The four-course menu begins with an appetizer of Tian of salmon, an elegant oak-smoked salmon served with creme fraiche, tomatoes, asparagus and lemon zest. The salad, Insalata Dello Chef, consists of locally farmed greens with fennel, beets and green beans drizzled with a dijon mustard and a Spanish red wine vinegar dressing. The signature entrée, Prime Rib and Lobster Tail, is an oven roasted all natural prime rib served with au jus and horseradish cream paired with Atlantic lobster tail in a Champagne sauce. And for dessert, Tiramisu consisting of a family recipe of Savoiardi sugar biscuits dipped in espresso and topped with marscapone sweet cream cheese sprinkled with cocoa.

Those looking to ring in the New Year with an evening of fine dining may consider the prix fixe offerings from one of OC’s most critically acclaimed restaurants. Bistango in Irvine is having live music and dancing from 9 p.m. – 1:30 a.m. The entertainment will be provided by the Larry Fresch quartet.

Executive Chef Javier Montoya has crafted a 3-course dinner for the evening that begins with a first course of your choice of sashimi-grade Yellowfin tuna tartar; green papaya and lobster salad; Tomato “Dashi” with scallions, baby shrimp, Shiitake mushrooms and carrots; or pancetta-wrapped Mexican prawn served with butternut-Kabocha squash risotto, aged balsamic and cranberry compote. Entrée choices include baked Chilean sea bass, grilled prime corn-fed filet mignon, roasted free-range chicken, Bistango’s cioppino and pan-roasted Kurobuta pork tenderloin medallion. Desserts selections include chocolate decadence cake and white chocolate cheesecake. There are differences in the 5 p.m. and 7:30 p.m. dinners and a Champagne toast is included in the latter seating. Cost is $69 for the first seating and $110 for the second.
