ARC Traditional Goose Holiday Dinner

ARC Chef Noah Blom is adding a traditional Goose dinner to the holiday menu at ARC Restaurant. The dinner, which will feature a whole-roasted goose, will pay homage to Blom’s mentor, the late-Chef Hans Prager, who offered an annual Goose Dinner at his Newport Beach restaurant, The Ritz.

Coal Roasted Goose…black pepper. honey. mustard. caraway. coriander.
Black Iron Potato “dumpling”…smashed yukon. cream. nutmeg.
Charred Red Cabbage… goose stock. duck fat. lemon.
Fire Roasted Apple…almond. goat cheese. chervil.

To complement all ARC menu offerings, ARC Bar Chef Koire Rogers offers a fresh, innovative cocktail menu that showcases housemade syrups and bitters, along with locally sourced artisanal ingredients. ARC’s bar program showcases a menu of house cocktails that embody the core approach to craft libations, as well as a selection of spicy beverages meant to provide a bit of heat during the cooler winter months. Bar Chef Koire has also debuted a line of vintage craft cocktails made with unique, quality ingredients and his signature techniques.
