Baja! Cooking on the Edge With Chef Deb Schneider

disclosure

Baja! Cooking on the Edge

Last Wednesday evening, Chef Deb invited us to celebrate the second edition release of her first cookbook… the cookbook that was responsible for the launch of her career with SOL Cocina in Newport Beach… Baja! Cooking on the Edge.

Baja! Cooking on the Edge 1

While preparing her Enseneda Style Shrimp Tacos from her book on the patio of SOL, Chef Deb shared with us how this, the first of five cookbooks she has written, was discovered by SOL Partners, Matt Baumayr and Rich Howland in a bookstore. They believed she might just be exactly the chef they were searching for and decided to contact her. The rest as they say, is history, as she is now Executive Chef/Partner for SOL and their recently opened sister restaurant, Solita in Huntington Beach.

Baja! Cooking on the Edge 3

We enjoyed her beer battered shrimp taco done Enseneda-style with creamy lime, pico, and cabbage…

Baja! Cooking on the Edge 4

Her garlic ribeye steak taco with cheese, rajas, red onions, chimichurri, cotixa and steak butter…

Baja! Cooking on the Edge 5

And her guacamole SOL with mango, tequila, onions, goat cheese, pepitas & cilantro

Baja! Cooking on the Edge, originally published eight years ago and selected by Food & Wine as one of 2006’s best cookbooks, honors the region with authentic recipes as well as Chef Deb’s own inspired creations.

If you’re looking to take a culinary trip to Baja, this cookbook should be part of your library. Oh and P.S., what a perfect Mother’s Day gift for someone who loves to cook, or for that matter someone who just loves to read cookbooks and drool over the dishes they would like to make, but never will. If the latter is someone you know, that’s okay too, the cookbook and a meal at SOL are in order!
