Brunos Trattoria New Summer Seasonal Menu

As the weather begins to heat up, Brunos Trattoria is embracing the season with traditional Italian dishes that are highlighted by fresh seasonal ingredients like squash blossoms, blood oranges, Bloomsdale spinach, artichokes and Galia melons. These ingredients, like all other Brunos Trattoria dishes, are prepared in a simple and rustic tradition by Italian Chef and Owner Peter Serantoni, who was influenced by his upbringing in Venice.

“As we transition into warmer weather we wanted to create dishes that have the traditional flavors of Italian cuisine, but that reflect the spirit of summer,” explain Peter. “And what better way to enjoy the new menu than by dining on our patio overlooking Brea Downtown.”

In addition, Brunos Trattoris will debut new wines and signature hand shaken cocktails. Based on the success of the structure of the wine list, which is comprised of 42 wines all offered at $7 a glass and $28 a bottle, Brunos Trattoris has expanded their offerings to include locally produced Italian varietals. General Manager Mark Jaeschke has hand selected these food friendly wines to complement the new summer dishes.

Chef De Cuisine Christian De La Vara’s menu highlights his creativity and talent in the kitchen with dishes such as:

Burrata Appetizer – Fresh burrata served on top of grilled house bread with roasted red beets, baby arugula, and toasted pistachios tossed in a light balsamic vinaigrette

Inslata di Polpo – Tender Mediterranean octopus served with baby arugula, watermelon radishes, celery, roasted potatoes, and olives all tossed in a Myer lemon balsamic vinaigrette

Ravioli di Fiore di Zucca – Homemade ravioli with squash blossoms, fresh ricotta, pistachio pesto and served with a tomato sauce, grated ricotta salata and virgin olive oil

Branzino – Mediterranean sea bass with roasted potatoes, fresh Bloomsdale spinach, lemon and capers

Salmone – Grilled Scottish salmon, artichokes, olives, fennel, roasted tomato citrus broth
