Community Supported Bakery Program (CSB) Starts in Orange County


Families in Orange County can now get fresh, local bakery items through the all-new Community Supported Bakery (CSB) program at The Ecology Center in San Juan Capistrano. Each month, families can order signature loaves using ingredients from The Ecology Center’s harvest.

The program is set-up similar to the Community Supported Agriculture Program (CSA) to help families purchase fresh products sourced from local farmers, or in this case bakers. It will help families to get bread with limited packaging and preservatives to help live healthier lifestyles.

This month’s offerings include:

Campagne – meaning “country” in French, it is a traditional French country bread made using liquid levain sourdough starter and a combination of wheat and rye flours which give this bread its rich, smokey flavor and darker crumb.

Rosemary Sourdough Boule – loaves are leavened with naturally occurring wild yeast starter, then fermented for another 12 hours to give them that sour tang and golden, bubbly crust. This month BREAD is adding fresh rosemary from The Ecology Center’s own garden!

Spelt Quinoa Orange – a hearth baked artisan boule made with a combination of wheat and spelt flours, red quinoa and zest from oranges picked fresh at The Ecology Center.

Cranberry Orange Brioche – made with the highest quality all natural ingredients including butter, eggs, dried cranberries and the zest of oranges freshly picked from The Ecology Center.

Rustic Grissini – an assortment of breadsticks including salt, seeded and pretzel

Kouign Amann – a delicious, soft, buttery, flaky, sweet pastry that melts in your mouth.

Customers may pre-order bread online, or visit the Tools for Change store to place an order in person. Pre-ordered baskets of bread will then be available for pick up at The Ecology Center between 10am-4pm on select Saturday dates.

Families must place their order before the end of day on the previous Thursday to have in time for pick up. Additionally BREAD artisan will also be available at the Downtown Santa Ana Farmer’s Market which launches tomorrow and will be held every Thursday from 2-8pm.
