Mindful Living at Veggie Grill

We dined as a guest of Veggie Grill

If you are like most Americans, then you made the resolution to eat healthy in 2015.  That’s a great resolution and who doesn’t want to eat healthier, I know I do.  The thing with eating healthier is planning it out and to be honest there are times that I am lazy and don’t want to prep then cook a healthy meal.  The dilemma is finding a place that has healthy options, packed with proteins and also low in calories.

This place doesn’t exist right?  Wrong, it does exist and its name is The Veggie Grill.  Now mind you I am not a stranger to The Veggie Grill.  If you look back at my old posts you can see that I love me The Veggie Grill and why wouldn’t I?  Veggie Grill chooses products from locally grown farms, because of this their menu changes seasonally but they still have some of my favorites year round.  On top of that Veggie Grill supports their local schools with fundraisers and gives 50% of their sales back to the school which is unheard of.  Veggie Grill is all around awesome and now they have a new campaign to Celebrate You!  How do they Celebrate You?

With their Mindful living, a menu that highlights items that are lower in calories, high in protein, nutrient dense, energy packed and flavor-full.  I went over to The Veggie Grill Tustin and their manager, Rick Navarro, served me up some taste dishes.  Now mind you because you are eating healthier options, you fill up quickly.  Each dish was full of flavor and delicious.

Mindful mash-up – Field Roast sausage, supergrains, kale + white bean braise, fire-roasted carrots, roasted red pepper sauce. (568 calories, 35g protein)

Latin living bowl – Fire-roasted carrots, seasoned black beans, avocado chunks, tomato corn salsa, jalapenos, red pepper sauce with supergrains (484 calories, 15g protein)

Banh mi salad – Organic tofu – pressed and glazed, chargrilled eggplant, house-picked carrots, white cabbage, fresh jalapenos, basil, cilantros and marinated kale (490 calories, 14g protein)

I’m an OC mom of two and photographer. I love living in Southern California and want to expose my children to all that it offers. I love taking my kids on adventures and capturing their every moment so much so that my kids find it odd if I don’t take their pictures. You can see my work on
