Paul’s Pizza & Grill, a new pizzeria and Mediterranean grill, will celebrate its grand opening this Friday, Sept. 23 at Plaza Antonio in Rancho Santa Margarita. The day will include food sampling of some of the restaurant’s popular dishes including pizza, falafel and baklava. In addition, Paul’s Pizza & Grill will donate 10 percent of all sales to the children’s charity, Newborns in Need.

The 3,800 sq. ft. casual family restaurant is open for lunch and dinner daily, and offers an array of pizza, salads and sandwiches. Diners can begin their meal with appetizers such as hummus, chicken wings, falafel balls with tahini sauce, spanakopita and other Mediterranean specialties.


The menu also features more than a dozen sandwiches, with cold sandwiches served on a roll or in a wrap, and ranging from roast beef and tuna, to Capicola, an Italian sub and more. Hot sandwiches include meatball, eggplant parmigiana, chicken parmigiana, gyro wrap, chicken souvlaki wrap, falafel wrap, hot pastrami and more. Add some chips or homemade pasta salad for a buck more or upgrade to a soup or green salads for just an additional buck and a quarter.
In a nod to the Italian side of the Mediterranean, Paul’s features calzones, including spinach, chicken cacciatore, all meat and veggie. Pasta dishes include a choice of pasta with marinara sauce, meat sauce, alfredo or vodka sauce, as well as manicotti, lasagna, baked ziti and cheese ravioli. Paul’s also offers a number of Mediterranean specialty dishes, including eggplant parmigiana with pasta, chicken parmigiana with pasta, shrimp scampi over pasta (or rice pilaf), chicken scampi over pasta (or rice pilaf), gyro platter, sautéed chicken, Greek style chicken cutlet, and chicken souvlaki platter. A variety of Angus burgers and side dishes round out the menu.

Paul’s Pizza & Grill is owned by Paul Vasilakos, his wife Virginia and son Nash, who also own Rubino’s Pizza in Mission Viejo. Paul and Virginia have spent over 45 years sharing their family recipes with customers on the East and West coast. They ultimately decided to open a restaurant with their own popular Greek and Italian dishes, including America’s favorite food, pizza. Paul and Georgia were born in Sparti, Greece and moved to the U.S in the 60’s, and raised their four children in Long Island, New York. Besides cooking, Pappou and Giagiá love spending time with their grandchildren.

Paul’s Pizza & Grill is open Monday through Thursday from 11am to 9pm, Friday and Saturday from 11am to 10pm, and Sunday from 12 to 9pm. The restaurant also offers take out and catering.
