I have Graves’ disease and have been on medication for about nine months, and hoping to go into remission.  At my last doctor’s visit, it was suggested that I reduce my gluten intake to help with not only my weight gain but also my energy level.  As you know, gluten is in everything which makes it difficult to go out to eat.  When our editor asked if I would like to attend a tasting at Stacked in Huntington Beach I had mixed feelings, how would I be able to maintain my new diet and still be able to enjoy all the yummy food?  I figured that I would have a salad while my family enjoyed everything that Stacked at to offer.  We arrived at 7490 Edinger Ave to the newly constructed building directly across from Bella Terra decorated in reclaimed wood with an indoor-outdoor motif.

As you walk into the well-lit restaurant with high ceilings and giant windows, I immediately felt like I was in one of the hippest spots in Orange County.  The subtle touches of stacked wood paying tribute to its name are seen throughout the restaurant design which had my kids playing the hidden stacked game (very similar to hidden Mickey’s but with stacked items such as wood, plates, and paper napkins).

The hostess took us to our table and showed us their two types of menus both paper and digital.

I love gadgets and couldn’t wait to order via the digital device at our table, but my mother was a bit apprehensive and took to the old school way of ordering.  I started with drinks and asked everyone at our table what they would like to order.  I scrolled to the menu’s beverage location and tapped beverage – so simple.

Once I found our drinks on the digital ordering device, I clicked a button to order and within minutes, we had our drinks.  Our server came by to check on us to make sure we weren’t overwhelmed and to see she if we had any questions.  My mom worriedly asked her if she had to use the digital menu or could she order through her.

The server relieved my mom’s fears and advised her that she can order with her, but I was encouraging her to at least give it a try.  So I thanked our server and decided to help my mom with ordering on the digital device. Within minutes my mom became a pro and started building her burger, ordering sides and having a blast.

Stacked is a perfect place to unwind, have a great meal and enjoy yourself.  The food is excellent, and you can’t beat the concept of building your meal exactly the way you want it.  Just like at home, when you create your food, you are in full control of what you are going eat, and can create a dish that is as healthy as you would like.
