Boudin Fresh New Spring Salads

Spring has sprung at your local Boudin where they are serving fresh and delicious seasonal salads for a limited time. I recently went to Boudin with my two children to see how the salads stack against other salads in the area and the flavors of the salads far exceeded my expectations.
Boudin has always been my go-to place for soup or sandwiches, and this was my first time trying one of their salads. We placed our order at the cash registers in the front of the restaurant, filled our cups with sweet iced tea, and then took a seat in a comfortable booth to await our lunch.
When the mouthwatering salads arrived at our table, we couldn’t wait to sink our taste buds into the fresh and healthy dishes. We began with my ultimate favorite salad on the new menu, the Lemony Couscous Salad. I love to eat dishes that feature lemons during the springtime, and this salad was one of the best lemon salads that I have ever had. It featured a spring mix, Israeli couscous, feta cheese, garbanzo beans, cucumber, grape tomatoes, Kalamata olives, roasted red pepper, red onion, parsley, and a creamy lemon dressing. The salad was made complete with slices of fresh chicken on top.
Our second favorite salad on the spring menu is the Forbidden Rice and Chicken Sesame Salad. The bowl came loaded with fresh spinach that was topped with black rice, sliced chicken, apples, garbanzo beans, pickled red onion, goat cheese, and sesame dressing. The salad was light, fresh, and delicious.
If you are a beet lover, then you’ll fall head over heels in love with the Bacon, Blue, and Beet salad. The salad features a spring mix topped with diced chicken, red onion, roasted golden and red beets, green beans, bacon, blue cheese, spiced walnuts and a ranch dressing.
Finally, there is the Mango and Red Quinoa Salad. This salad was my daughters favorite and featured crisp romaine, spicy baby arugula, red quinoa, mango, red grapes, red onion, almonds and goat cheese. The salad comes tossed in a mango citrus vinaigrette and is pure perfection when topped with slices of chicken.
